Ingredients
6 tomatoes, peeled, seeded and diced
4 cups canned tomato juice
1/2 cup chopped fresh basil
1/2 cup (1 stick) butter
salt and pepper to taste
1 (8 ounce package) marscapone cheese
Directions
- Place the tomatoes and juice in a stock pot over medium heat and simmer for 30 minutes. Remove from heat and let cool for 10 minutes.
- In a blender puree the soup along with the basil. Return the soup to the pot. Reheat to a simmer and add the butter and salt and pepper.
- To serve, ladel the soup into bowls and dollop with 1 to 2 tablespoons of Marscapone cheese.
