Sicilian Pasta

Ingredients

1 cup broccoli florets

¼ cup extra virgin olive oil

2 cloves garlic, minced

1 pound large shrimp, peeled and deveined

¼ cup dry white wine

½ teaspoon kosher salt

¼ teaspoon freshly ground black pepper

1 cup broccoli florets, blanched

¼ cup diced sun-dried tomatoes

¼ cup chicken broth

1 tablespoon butter

1 pound dried linguini, cooked according to package instructions

¼ cup chopped fresh basil leaves

¼ cup chopped fresh Italian parsley

Parmesan cheese for garnish

Directions

  1. Bring a medium pot of water to a boil to blanch to broccoli for 2 to 3 minutes.
  2. In a large skillet, heat the olive oil. Add the garlic, shrimp, wine, salt and pepper. Cook until the shrimp are opaque and pink, about 3 to 5 minutes.
  3. Add the broccoli, sun-dried tomatoes, chicken broth, linguini noodles and the butter to the skillet. Toss in the basil and parsley to combine.  Remove from heat and let sit for a few minutes so the pasta will absorb the flavors. Garnish with Parmesan cheese.
