Ingredients
1 pound fresh raw shrimp, peeled and deveined
1/3 cup olive oil
3 cloves garlic, minced
¼ cup tomato sauce
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
½ teaspoon salt
¼ teaspoon crushed red pepper flakes
1 red bell pepper, seeded and sliced
1 yellow bell pepper, seeded and sliced
1 sweet yellow onion, sliced
1 cup Monterey Jack cheese
1 package flour tortillas, taco sized
Sour cream, salsa, guacamole
Directions
- In a large bowl combine the oil, garlic, tomato sauce, vinegar, basil, salt and red pepper flakes. Mix thoroughly and add the shrimp. Toss and coat evenly. Cover and refrigerate for at least 30 minutes and up to 2 hours.
- Preheat outdoor grill and lightly oil the grate. Remove the shrimp from the marinade and thread onto skewers (If you are using wood skewers, make sure to soak them for 20 minutes before using). Grill for 3 minutes on each side or until they are pink and opaque.
- In a large skillet add 1 tablespoon of oil. Sauté peppers and onions until softened. Salt and pepper to taste.
- To assemble, add to a tortilla, the peppers, onions and shrimp.
