Ingredients
1 tablespoon vegetable oil
8 ounces smoked Andouille sausage, or other smoked sausage, sliced into bite-sized chucks
2 medium bell peppers, seeded and chopped
1 medium onion, chopped
1 small jalapeno pepper, seeded and chopped
1 tablespoon minced garlic
2 cups chicken broth
1 cup uncooked long-grain white rice
2 teaspoon paprika
½ teaspoon dried basil
½ teaspoon black pepper
½ teaspoon dried thyme
1/8 teaspoon ground cayenne pepper, to taste
1 tablespoon vegetable oil
1 pound raw shrimp, peeled and deveined
Hot pepper sauce, to taste
Directions
- In a large pot over medium heat, add the oil and cook the sausage, peppers, onion, jalapeno, and garlic until tender.
- Add the chicken broth, rice, paprika, dried basil, pepper, thyme, and cayenne to the pot. Bring to a boil, reduce heat and simmer for 20 to 25 minutes or until rice is tender.
- In a separate skillet, heat 1 tablespoon oil and cook the shrimp until pink and opaque, about 3 to 4 minutes. Add to the jambalaya and serve with hot pepper sauce to taste.
