Ingredients
1 pound of butter
½ cup finely chopped shallots
10 cloves garlic, minced
2 teaspoons kosher salt
¼ to ½ teaspoon crushed red pepper flakes
1 ½ cups dry sherry
2 pounds of medium to large shrimp, peeled and deveined
2 sweet red bell peppers, seeded and sliced
Directions
- In a medium saucepan, melt the butter. Add the shallots, garlic, salt, crushed red pepper flakes and simmer for 3 minutes. Add the sherry and simmer for 5 minutes. Set aside.
- In a large skillet and ¼ cup of the butter mixture. Sauté the shrimp until done. About 3 minutes per side. Don’t over crowd the shrimp. You will have to do this in batches. Remove to a platter.
- Sauté the red peppers until tender. Add the rest of the butter mixture and pour over the shrimp.
