Ingredients

1 boneless beef rump roast (3 ½ pounds)

1 teaspoon kosher salt

½ teaspoon pepper

1 tablespoon flour

1 cup beef broth

Directions

  1. Rub roast with salt and pepper; place fat side up on a rack in a roasting pan. Do not add water or cover. Insert meat thermometer into center of meat.
  2. Roast in a 325 degree oven, allowing 20 minutes per pound for rare, 30 minutes per pound for medium.
  3. Place roast on cutting board and allow to stand for 15 minutes before carving.
  4. Meanwhile skim off all fat from roasting pan into a cup, leaving juices in pan. Return 1 tablespoon of fat to the pan. Blend in 1 tablespoon of flour. Cook, stirring just until mixture bubbles. Stir in the beef broth slowly and continue cooking and stirring; scraping up the baked on juices from the bottom of the pan, until gravy thickens and bubbles 3 minutes. Taste and season with salt and pepper if needed. Serve with the roasted beef.
