Ingredients
2 tablespoons extra-virgin olive oil
1 teaspoon minced garlic (2 cloves)
1 cup onion, finely chopped
1 cup Arborio rice
¼ teaspoon kosher salt
¼ teaspoon freshly cracked black pepper
½ cup dry white wine
4 cups chicken stock
1 cup frozen peas
1/3 cup grated Parmesan or Romano cheese
¼ cup chopped flat leaf parsley
Directions
- Heat the oil over medium high heat in a large skillet. Add the garlic and onion and sauté, stirring constantly for about 3 minutes.
- Add the rice and season with salt and pepper. Stir constantly and cook for a minute. Add the wine and let completely absorb, stirring constantly.
- When the wine is absorbed add 1 cup of stock and stir. Reduce the heat to medium. Stir frequently. When stock is absorbed add another half of a cup. Repeat this process for approximately 20 minutes. The consistency should be creamy.
- Add in the peas and cook for another minute or so. Remove from the heat and stir in the parsley and cheese.
