Ingredients

2 tablespoons extra-virgin olive oil

1 teaspoon minced garlic (2 cloves)

1 cup onion, finely chopped

1 cup Arborio rice

¼ teaspoon kosher salt

¼ teaspoon freshly cracked black pepper

½ cup dry white wine

4 cups chicken stock

1 cup frozen peas

1/3 cup grated Parmesan or Romano cheese

¼ cup chopped flat leaf parsley

Directions

  1. Heat the oil over medium high heat in a large skillet. Add the garlic and onion and sauté, stirring constantly for about 3 minutes.
  2. Add the rice and season with salt and pepper. Stir constantly and cook for a minute. Add the wine and let completely absorb, stirring constantly.
  3. When the wine is absorbed add 1 cup of stock and stir. Reduce the heat to medium. Stir frequently. When stock is absorbed add another half of a cup. Repeat this process for approximately 20 minutes. The consistency should be creamy.
  4. Add in the peas and cook for another minute or so. Remove from the heat and stir in the parsley and cheese.
