Ingredients
3 tablespoons butter
3 tablespoons flour
1 1/2 teaspoon salt
1/4 teaspoon pepper
1 (15 ounce) can chicken broth
1/2 cup milk
6 cups of potatoes, peeled and thinly sliced
1 meduim yellow onion, chopped
1 cup cheddar cheese, shredded
6 pork chops
Directions
- Preheat oven to 350 degrees F. Spray a 9x13 glass baking dish with non-stick cooking spray.
- In a medium saucepan, melt the butter and add the flour, salt and pepper, cook for 1 minute. Add the broth and milk and cook until thickened. Set aside
- Layer the potatoes and onion. Cover with the cheddar and pour the broth mixture over the top.Place the pork chops on top of the potatoes.
- Cover and bake for 1 hour in a preheated oven. Uncover and bake an additional 30 minutes.
