Ingredients

1 cup (2 sticks) unsalted butter, softened

1/4 cup sugar

3 tablespoons brandy

1 teaspoon vanilla

3 cups all-purpose flour, sifted

2 cups finely chopped pecans

Directions

  1. Beat butter, sugar, brandy and vanilla in a large bowl until smooth. Stir in flour to make a soft dough. Work in the pecans until well blended.
  2. Dough can be frozen for up to 1 month, or baked immediately.
  3. Preheat oven to  300 degrees F.
  4. Shape dough into balls (1 tablespoon). Place 1 inch apart on an ungreased cookie sheet. Bake in a preheated oven  for 25 minutes or until the bottoms are browned and tops are lightly golden.  Remove from cookie sheet and roll in powdered sugar. Cool, roll in sugar again. Store in an airtight
