Overnight French Toast Casserole

Ingredients

1 large loaf of french bread

1 cup sugar

2 teapoons ground cinnamon

8 eggs

2 cups heavy cream

1 bag frozen mixed berries

1/2 cup sugar

 

 

Directions

  1. Cut the bread into 1 inch thick pieces.
  2. In a small bowl, mix together the sugar and the cinnamon.
  3. In a large bowl whisk together the eggs cream and 3/4 cup of sugar. Add in the bread pieces and stir to coat. Place in the refrigerator overnight.
  4. In the morning, preheat the oven to 350 degrees F. Coat a 9 x 13 glass baking dish with non stick cooking spray.
  5. Spread the bread mixture into the prepared dish and sprinkle the cinnamon and sugar on top.
  6. Bake for 40 minutes until browned and crispy around the edges.
  7. In the meantime, in a sauce pan add the frozen fruit and 1/2 cup sugar, bring to a simmer. Simmer for 10 minutes until thickened. Remove from heat and let cool until casserole is done.
  8. To serve, cut casserole into squares, serve with chunky fruit syrup.
