Ingredients

1 cup butter, softened

1 cup white sugar

1 cup packed brown sugar

2 eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon kosher salt

1 ½ teaspoons ground cinnamon

3 cups quick cooking oats

¼ cup white sugar

Directions

  1. In a medium bowl, cream the butter and sugars together. Beat in the eggs one at a time. Stir in the vanilla.
  2. In another bowl combine the flour, baking soda, salt and cinnamon. Stir into the butter mixture. Then incorporate the oats in. Cover and chill in the refrigerator for 1 hour.
  3. Preheat the oven to 375 degrees F. Grease the cookie sheets. Roll the dough into walnut-sized balls and roll in sugar. Place on the cookie sheet 2 inches apart.
  4. Bake for 8 to 10 minutes in a preheated oven. Allow cookies to rest on the cookie sheet for 5 minutes before removing to a wire rack to let cool completely.
