Oatmeal Cookies

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 ½ teaspoons ground cinnamon
3 cups quick cooking oats
¼ cup white sugar
Directions
- In a medium bowl, cream the butter and sugars together. Beat in the eggs one at a time. Stir in the vanilla.
- In another bowl combine the flour, baking soda, salt and cinnamon. Stir into the butter mixture. Then incorporate the oats in. Cover and chill in the refrigerator for 1 hour.
- Preheat the oven to 375 degrees F. Grease the cookie sheets. Roll the dough into walnut-sized balls and roll in sugar. Place on the cookie sheet 2 inches apart.
- Bake for 8 to 10 minutes in a preheated oven. Allow cookies to rest on the cookie sheet for 5 minutes before removing to a wire rack to let cool completely.
