Nana's Beef Stew

Ingredients

1/4 cup butter

3 tablespoons olive oil

2 pounds lean stew meat

1 teaspoon kosher salt

1/4 teaspoon ground pepper

1 cup red wine (cab. sav.)

1/3 cup minced(fine) carrot

1 cup minced (fine) onion

4 tablespoons flour

1 teaspoon minced garlic

1/2 teaspoon dried thyme

2 bay leaves

1/2 cup fresh parsley, chopped, divided

4 cups of beef stock

8 small carrots

2 cups of new potatoes, halved or quartered

1 cup sliced mushrooms

grated parmesan cheese for garnish

Directions

  1. Melt butter and oil in a stock pot, add beef and brown on all sides.Sprinkle with salt and pepper. Add wine and simmer for 5 minutes.
  2. Add minced carrots, onions, flour, garlic, thyme, bay leaves, 1/4 cup parsley and 2 1/2 cups of the beef stock. Simmer for 1 1/2 hours until meat is tender.
  3. Then add carrots, potatoes, mushrooms, 1/4 cup parsley and 1 1/2 cups stock. Cover and simmer for 30 minutes or until vegetables are tender.
  4. To serve, ladel stew into a bowl and garnish with parmesan cheese.
