Nana's Applesauce Cookies

Ingredients

1/2 cup butter

1/4 cup soft shortening

1 cup brown sugar

1 egg

1/2 cup applesauce

2 1/4 cup sifted flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon pumpkin spice

1/2 cup chopped pecans or walnuts, optional

ICING:

1/2 cup butter

3 cups sifted powdered sugar

1 teaspoon vanilla extract

3 to 4 tablespoons water

 

 

Directions

  1. Preheat the oven to 375 degrees. Spray a cookie sheet with non stick cooking spray.
  2. Mix together butter, shortening, brown sugar and the egg. Stir in the applesauce,flour, baking soda, salt, and pumpkin spice. Stir in the nuts if using.
  3. Drop by teaspoonfuls on prepared cookie sheet and bake for 10-12 minutes.
  4. Meanwhile prepare the icing. In a small saucepan heat the butter over medium heat until golden brown, stirring occasionally. Remove from heat and stir in the powdered sugar and vanilla. Stir in just enough water to make it drizzling consistency. Drizzle on the warm coookies.
