Mushroom Bacon Stuffed Tenderlion

Ingredients

3 slices of bacon

2 tablespoons finely chopped onion

1 cup fresh mushrooms, finely choped

1 garlic clove, minced

3/4 cup dry breadcrumbs, divided

2 tablespoons fresh parsley, finely chopped

1 tablespoon butter, melted

1 tablespoon grated parmesan cheese

 

Directions

  1. Preheat oven to 350 degrees F.
  2. In a skillet, cook the bacon until crisp. Remove until cool and crumble. Drain the fat reserving 1 tablespoon of drippings.
  3. In the drippings saute the onion, mushrooms and garlic until tender. Remove from heat and stir in 1/2 cup of the breadcrumbs, parsley and cooked bacon.
  4. Slice the pork tenderloin lengthwise three-quarters of the way through. Lightly place stuffing in the pocket. Close with toothpicks or kitchen twine.
  5. Combine the butter and the parmesan and coat the outside of the meat. Then press the remaining breadcrumbs on top of the cheese mixture.
  6. Place the meat on a rack in a shallow roating pan and bake uncovered for 15 minutes. Cover and bake for 1 hour or until meat reaches your desired doneness (medium 160 degrees). Let stand 10 minutes. Remove the toothpicks or kitchen twine before slicing.
