Ingredients
3 slices of bacon
2 tablespoons finely chopped onion
1 cup fresh mushrooms, finely choped
1 garlic clove, minced
3/4 cup dry breadcrumbs, divided
2 tablespoons fresh parsley, finely chopped
1 tablespoon butter, melted
1 tablespoon grated parmesan cheese
Directions
- Preheat oven to 350 degrees F.
- In a skillet, cook the bacon until crisp. Remove until cool and crumble. Drain the fat reserving 1 tablespoon of drippings.
- In the drippings saute the onion, mushrooms and garlic until tender. Remove from heat and stir in 1/2 cup of the breadcrumbs, parsley and cooked bacon.
- Slice the pork tenderloin lengthwise three-quarters of the way through. Lightly place stuffing in the pocket. Close with toothpicks or kitchen twine.
- Combine the butter and the parmesan and coat the outside of the meat. Then press the remaining breadcrumbs on top of the cheese mixture.
- Place the meat on a rack in a shallow roating pan and bake uncovered for 15 minutes. Cover and bake for 1 hour or until meat reaches your desired doneness (medium 160 degrees). Let stand 10 minutes. Remove the toothpicks or kitchen twine before slicing.
