1 cup white granulated sugar
1 cup water
½ cup mint leaves, packed
½ cup freshly squeezed lime juice
¼ cup lime zest
1/8 cup rum
1 cup lemon lime soda
Directions
- In a medium saucepan over medium heat, combine sugar and water, stirring until sugar dissolves. Add the mint leaves, bring to a boil and reduce heat to low, simmer for 5 minutes. Remove from heat and let stand for 10 minutes. Strain through a fine strainer into a large bowl. Add the lime juice, zest, rum and soda to the syrup. Stir to combine. Chill in the refrigerator until completely cooled, about 2 hours.
- Process in an ice cream maker according to manufacturer’s instructions.
