Ingredients
1 pound fresh or frozen raw shrimp
¼ cup ketchup
¼ cup lime juice
1 to 2 teaspoons hot pepper sauce
½ cup chopped tomato
¼ cup chopped white onion
¼ cup chopped cilantro
2 avocados, pitted, peeled and chopped
Directions
- Thaw shrimp, peel, devein, and cook in a large pot full of boiling water for 1 to 2 minutes or until shrimp turns pink. Stir occasionally, drain and rinse under cold water.
- In a large bowl stir together ketchup, lime juice and hot pepper sauce. Add the shrimp, tomato, onion and cilantro and toss to coat. Cover and chill for at least 2 hours or up to 4 hours.
- Just before serving, add the avocados and toss.
