Ingredients
1 pound Rotini pasta, cooked according to package instructions and drained
2 ½ tablespoons good quality extra virgin olive oil
1/3 cup fresh basil, chopped or torn
3 tablespoons fresh lemon juice
2 teaspoons lemon zest
½ cup dry white wine
4 cups baby spinach
1/8 teaspoon crushed red pepper flakes
3 cloves garlic, minced
½ cup of finely chopped red bell pepper
½ cup of finely chopped green onion, white and tender green parts
1 tablespoon dried oregano
Kosher salt and freshly ground pepper
Directions
- Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper, cook for 1 minute. Add the lemon juice, lemon zest, white wine, basil, and green onion. Let simmer for 4 to 5 minutes to let the sauce reduce some. Add the lobster meat to heat through, about 2 minutes.
- When pasta is done place in a large serving dish and pour the lobster sauce over it. Add the spinach and red pepper flakes, toss and serve.
