Ingredients
1 (14 ounce) bag white corn tortilla chips
8 ounce monterey jack cheese, shredded
8 ounce cheddar chees, shredded
3 garlic cloves, minced
1 cup red onion, chopped
1 Serrano chile pepper, minced
14 ounces cooked lobster meat
2 green onion, white and green parts, chopped
2 medium vine ripe tomatoes, chopped
1 hand full fresh cilantro leaves, chopped
1 cup sour cream
Directions
- Preheat oven to 350 degrees F.
- Blend both cheeses together. Place the chips into a 13 x 9 glass baking dish and sprinkle with cheese. Place in a preheated oven for 15 minutes or until cheese is melted.
- In the meantime, melt the butter over midium heat in a large frying pan, add the garlic, onion and chile pepper. Saute until onions are tender, about 5 minutes, Add the lobster to the skillet to warm through, about 3 minutes. With a slotted spoon layer the seafood mixture over the top of the chips and cheese.
- Top with the green onions, tomatoes, cilantro and sour cream and serve immediately.
