Ingredients
1 bag yellow corn tortilla chips
2 cups cheddar jack cheese, shredded
1 (15 ounce) can refried black beans
1/2 teaspoon cayenne pepper
2 tablespoons water
2 green onions, chopped
1 medium tomato, chopped
1 avocado, diced
1/2 cup shredded lettuce
1/4 cup sliced black olives
1/2 cup chopped red onion
1/2 cup chopped red pepper
1 (4 ounce) can mild green chili
1 handful fresh cilantro, chopped
salsa, for garnish
sour cream, for garnish
Directions
- Preheat oven to 350 degrees F.
- In a small bowl mix together the refried beans, cayenne pepper and water.
- On a rimmed cookie sheet, layer the chips, beans mixture and cheese. Bake for 15 minutes until cheese is melted.
- Top nachos with green onion, tomato, avacado, shredded lettuce, black olives, red pepper, red onion, green chile and cilantro
- Serve with salsa and sour cream.
