Ingredients

1 bag yellow corn tortilla chips

2 cups cheddar jack cheese, shredded

1 (15 ounce) can refried black beans

1/2 teaspoon cayenne pepper

2 tablespoons water

2 green onions, chopped

1 medium tomato, chopped

1 avocado, diced

1/2 cup shredded lettuce

1/4 cup sliced black olives

1/2 cup chopped red onion

1/2 cup chopped red pepper

1 (4 ounce) can mild green chili

1 handful fresh cilantro, chopped

salsa, for garnish

sour cream, for garnish

Directions

  1. Preheat oven to 350 degrees F.
  2. In a small bowl mix together the refried beans, cayenne pepper and water.
  3. On a rimmed cookie sheet, layer the chips, beans mixture and cheese. Bake for 15 minutes until cheese is melted.
  4. Top nachos with green onion, tomato, avacado, shredded lettuce, black olives, red pepper, red onion, green chile and cilantro
  5. Serve with salsa and sour cream.
