2 tablespoons unsalted butter
1 pound thin, tender asparagus, trimmed and cut diagonally into 1 ½ - inch pieces
Juice of 1 lemon
½ teaspoon of salt
¼ teaspoon freshly ground black pepper
Finley grated zest of ½ lemon
Directions
1. In a large skillet, melt butter over medium-high heat. Add asparagus and toss to coat. Cover and cook for 2 or 3 minutes or until the asparagus is bright green and crisp-tender, shaking the pan occasionally. Stir in lemon juice, salt, and pepper. Sprinkle with lemon zest.
