Lasagna Soup

Ingredients

1 pound Italian sausage, removed from castings

1 cup carrots, thinly sliced

2 cups onion, finely chopped

2 cups mushrooms, sliced

2 tablespoons minced garlic

4 cups chicken broth

1 (14 ounce) can Italian style tomatoes, diced

1 (15 ounce) can tomato sauce

1 cup mini bowtie pasta

2 cups fresh spinach, lightly chopped

4 tablespoons chopped fresh basil

sliced provolone or mozzarella cheese

1/4 cup parmesan, grated

 

Directions

  1. Brown the sausage in a large stock pot for 5 minutes, breaking up into pieces.
  2.  Add the carrots and onion and saute for 5 to 7 minutes until they become soft.
  3. Stir in the mushrooms and garlic and saute for 5 more minutes.
  4. Add the broth, tomatoes and sauce, bring to a boil.
  5. Drop the pasta in and cook until done (according to package).
  6. Stir in the spinach and basil, cook until wilted.
  7. To serve, put the cheese slice in the bottom of the bowl, ladel in the soup and top with parmesan cheese.
