Ingredients
1 pound Italian sausage, removed from castings
1 cup carrots, thinly sliced
2 cups onion, finely chopped
2 cups mushrooms, sliced
2 tablespoons minced garlic
4 cups chicken broth
1 (14 ounce) can Italian style tomatoes, diced
1 (15 ounce) can tomato sauce
1 cup mini bowtie pasta
2 cups fresh spinach, lightly chopped
4 tablespoons chopped fresh basil
sliced provolone or mozzarella cheese
1/4 cup parmesan, grated
Directions
- Brown the sausage in a large stock pot for 5 minutes, breaking up into pieces.
- Add the carrots and onion and saute for 5 to 7 minutes until they become soft.
- Stir in the mushrooms and garlic and saute for 5 more minutes.
- Add the broth, tomatoes and sauce, bring to a boil.
- Drop the pasta in and cook until done (according to package).
- Stir in the spinach and basil, cook until wilted.
- To serve, put the cheese slice in the bottom of the bowl, ladel in the soup and top with parmesan cheese.
