Ingredients
4 pita bread rounds
1/2 cup marinara sauce
1/2 cup Parmesan cheese, grated, divided
1/2 cup mozzerella cheese, shredded
1 (4 ounce) can sliced black olives
1/4 cup artichoke hearts packed in water, chopped
1/4 cup sliced, pickled pepperoncini
1/2 cup fresh basil, chopped
1/2 cup baby spinach, chopped
1 tablespoon fresh Italian parsley, chopped
Directions
- Preheat oven to 350 degrees F.
- Use kitchen shears to cut the pita bread into triangles. Peel apart to make as many triangles as possible. Spread triangles onto a large baking sheet and sprinkle with 1/4 cup of the parmesan cheese.
- Toast the pita triangles for 10 to 15 minutes in the preheated oven until lightly brown and crispy.
- Meanwhile, in a small sauce pan, heat the marinara sauce just until it comes to a simmer. Remove from the heat.
- Transfer pita chips to a serving platter, pour sauce over chis. Add the mozzarella and 1/4 cup of the parmesan. Top with olives , artichoke hearts, pepperoncinis, spinach, basil and parsley. Serve immediately.
