Ingredients

4 pita bread rounds

1/2 cup marinara sauce

1/2 cup Parmesan cheese, grated, divided

1/2 cup mozzerella cheese, shredded

1 (4 ounce) can sliced black olives

1/4 cup artichoke hearts packed in water, chopped

1/4 cup sliced, pickled pepperoncini

1/2 cup fresh basil, chopped

1/2 cup baby spinach, chopped

1 tablespoon fresh Italian parsley, chopped

Directions

  1. Preheat oven to 350 degrees F.
  2. Use kitchen shears to cut the pita bread into triangles. Peel apart to make as many triangles as possible. Spread triangles onto a large baking sheet and sprinkle with 1/4 cup of the parmesan cheese.
  3. Toast the pita triangles for 10 to 15 minutes in the preheated oven until lightly brown and crispy.
  4. Meanwhile, in a small sauce pan, heat the marinara sauce just until it comes to a simmer. Remove from the heat.
  5. Transfer pita chips to a serving platter, pour sauce over chis. Add the mozzarella and 1/4 cup of the parmesan. Top with olives , artichoke hearts, pepperoncinis, spinach, basil and parsley. Serve immediately.
