Ingredients
2 pounds ground beef
1 cup finely chopped onion
1 clove garlic, minced
1 (14.5) ounce can diced tomatoes, drained
Grated zest of lemon
1 ½ teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
¼ cup chopped fresh parsley
1 ½ cups soft bread crumbs
2 large eggs, beaten
1 cup cubed fresh Mozzarella cheese
1 cup marinara sauce
Directions
- Preheat oven to 350 degrees F. Line 2 baking sheets with aluminum foil.
- In a large bowl combine the beef, onion, garlic, tomatoes, lemon zest, salt, pepper, oregano, basil, parsley, bread crumbs and eggs until blended. Mix in the Mozzarella cheese.
- Form the meat into two 6 inch long and 3 inch wide loafs on the baking sheets. Top with the marinara, spreading evenly over the top and sides of loaf.
- Bake for 45 to 50 minutes or until an instant-read meat thermometer inserted into the center reaches 160 degrees in the middle. Remove from the oven and let rest for 15 minutes. Cut into thick slices with a serrated knife.
