Ingredients

2 pounds ground beef

1 cup finely chopped onion

1 clove garlic, minced

1 (14.5) ounce can diced tomatoes, drained

Grated zest of lemon

1 ½ teaspoon kosher salt

1 teaspoon freshly ground black pepper

1 teaspoon dried oregano

1 teaspoon dried basil

¼ cup chopped fresh parsley

1 ½ cups soft bread crumbs

2 large eggs, beaten

1 cup cubed fresh Mozzarella cheese

1 cup marinara sauce

Directions

  1. Preheat oven to 350 degrees F. Line 2 baking sheets with aluminum foil.
  2. In a large bowl combine the beef, onion, garlic, tomatoes, lemon zest, salt, pepper, oregano, basil, parsley, bread crumbs and eggs until blended. Mix in the Mozzarella cheese.
  3. Form the meat into two 6 inch long and 3 inch wide loafs on the baking sheets. Top with the marinara, spreading evenly over the top and sides of loaf.
  4. Bake for 45 to 50 minutes or until an instant-read meat thermometer inserted into the center reaches 160 degrees in the middle. Remove from the oven and let rest for 15 minutes. Cut into thick slices with a serrated knife.
