Ingredients
6 to 8 pound fully cooked, hone-in ham (spiral sliced is best)
1 ½ cups Dijon mustard
1 cup honey
¼ cup white vinegar
2 teaspoons dried herbs de Provence
½ cup light brown sugar
Directions
- Preheat the oven to 300 degrees. Line a large roasting pan with aluminum foil.
- Remove the packaging from the ham and drain off any juices. Place in the roasting pan flat side down. Cover completely with foil. Bake until an instant read thermometer registers 130 degrees, about 2 ½ hours.
- To make the glaze: in a medium bowl, combine the mustard, honey, vinegar and herbs.
- Increase the oven temperature to 375 degrees and remove the foil. Pour half the glaze over the ham and bake uncovered for 20 minutes, basting every 10 minutes with the juices from the pan.
- Remove the ham from the oven and sprinkle with brown sugar evenly. Bake for 10 minutes more or until the sugar caramelizes.
- Remove the ham from the oven and let rest for 15 minutes before carving. Serve with the remaining glaze on the side.
