Ingredients
2 tablespoons unsalted butter
1 tablespoon vegetable oil
½ cup finely chopped yellow onion
1 cup white button mushrooms, sliced
4 cups diced cooked potatoes (left over baked potatoes are good)
1 teaspoon salt
½ teaspoon black pepper
1 cup finely diced ham
8 large eggs
¼ cup milk
5 shakes hot pepper sauce
1 ½ cups Gruyere Swiss cheese
Directions
- Preheat oven to 350 F.
- In a large oven safe skillet, heat the butter and the oil. When the butter is melted, add the onion and mushrooms, cook for 5 minutes until they begin to soften.
- Add the potatoes and sprinkle with salt and pepper. Cook until the potatoes begin to brown, about 5 minutes.
- Add the ham and cook for another 5 minutes.
- Meanwhile, in a large bowl, whisk together the eggs, milk, and hot pepper sauce. Pour over the potatoes, mushrooms and onion in the skillet.
- Stir the eggs, moving the vegetables off the bottom of the pan so they don’t stick. When the eggs are partially cooked (still runny), sprinkle with the cheese and bake in the oven for 10 to 15 minutes. Cheese will be melted and the eggs will be done.
