Ingredients
4 salmon fillets, bones and skin removed
2 tablespoons smoked paprika
1 tablespoon cayenne
1 tablespoon onion powder
2 teaspoon kosher salt
1 teaspoon cracked black pepper
¼ teaspoon dried thyme
¼ teaspoon dried basil
¼ teaspoon dried oregano
½ cup butter, melted, divided
2 tomatoes, diced
½ cup red onion
1 tablespoon canned green chilies
1 tablespoon fresh parsley, chopped
1 tablespoon fresh cilantro, chopped
1 tablespoon red wine vinegar
1 teaspoon lime juice
1 avocado quartered and pitted.
Directions
- In a small bowl, combine the paprika, cayenne, onion powder, salt, pepper, thyme, basil and oregano. Brush both sides of fish with ¼ cup of butter. Rub with the spice mixture and drizzle with half the remaining butter.
- In a large skillet, cook the salmon over high heat, butter side down, for 3 to 5 minutes. Drizzle the fish with remaining butter and flip. Cook until blackened and fish flakes easily with a fork, about 2 to 4 minutes.
- In a small bowl combine the tomatoes, red onion, chilies, parsley, cilantro, vinegar and lime juice. Toss together and let sit 10 minutes. Place a spoonful on top of avocado quarter. Eat with the fish as a condiment.
