Ingredients
1 whole boneless, skinless chicken breast
1 teaspoon paprika
¼ teaspoon cayenne pepper
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
½ teaspoon kosher salt
¼ teaspoon onion powder
¼ teaspoon dried oregano
¼ teaspoon dried thyme
1 package spring mix or baby greens
1 ripe peach, peeled and sliced
1 medium ripe tomato, roughly chopped
½ cup reduced-fat feta cheese, crumbled
Directions
- In a small bowl, combine the paprika, cayenne pepper, black pepper, garlic powder, salt, onion powder, oregano and thyme. Sprinkle on the chicken and rub. Heat an outdoor grill to medium-high and cook chicken until done, about 12 minutes. Remove, let rest for 5 minutes and slice.
- In a large bowl, combine the greens, peach, tomato, and feta. Place the chicken on top. You can use a low-calorie dressing if you like.
