Ingredients

4 medium baking potatoes

Vegetable oil for deep-fat frying

Kosher Salt

Directions

  1. Wash and peel potatoes. Cut into long ½-inch wide slices; cut into ½-inch strips. Drop strips into a bowl of ice cold water. Dry on paper towels before frying.
  2. Heat 3 inches of oil in a large saucepan to 325 degrees on a deep-fat frying thermometer, or use a deep fat fryer.
  3. Place a handful of potatoes into the hot oil. Cook 5 or 6 minutes or until tender but not brown. Stir the potatoes occasionally to keep them from sticking. Remove with a slotted spoon and drain on paper towels. This initial frying may be done several hours ahead of time and the potatoes left at room temperature.
  4. Reheat oil to 375 degrees. Add the precooked potatoes a handful at a time, and fry for 2 to 3 minutes, or until golden brown and crisp. Drain on paper towels and keep warm in the oven at 250 degrees. Season with salt.
