Ingredients
4 medium baking potatoes
Vegetable oil for deep-fat frying
Kosher Salt
Directions
- Wash and peel potatoes. Cut into long ½-inch wide slices; cut into ½-inch strips. Drop strips into a bowl of ice cold water. Dry on paper towels before frying.
- Heat 3 inches of oil in a large saucepan to 325 degrees on a deep-fat frying thermometer, or use a deep fat fryer.
- Place a handful of potatoes into the hot oil. Cook 5 or 6 minutes or until tender but not brown. Stir the potatoes occasionally to keep them from sticking. Remove with a slotted spoon and drain on paper towels. This initial frying may be done several hours ahead of time and the potatoes left at room temperature.
- Reheat oil to 375 degrees. Add the precooked potatoes a handful at a time, and fry for 2 to 3 minutes, or until golden brown and crisp. Drain on paper towels and keep warm in the oven at 250 degrees. Season with salt.
