Ingredients

2 cups cake flour

2 teaspoons baking powder

¼ teaspoon kosher salt

½ cup butter, softened

1 cup sugar

3 egg yolks

1 teaspoon vanilla extract

¾ cup milk

3 ounces unsweetened chocolate

3 tablespoons butter

¼ cup cream or hot water

1/8 teaspoon salt

2 cups confectioners’ sugar, more or less

1 teaspoon vanilla

Directions

  1. Preheat oven to 375 degrees F. Grease a muffin tin or use paper liners.
  2. In a medium bowl, whisk together the flour, baking powder and salt.
  3. In a large mixing bowl, cream together the butter and sugar until fluffy. Beat in the egg yolks and vanilla.
  4. Add the flour mixture to the butter mixture in 3 parts, alternating with the milk. Stir until smooth.
  5. Pour batter into prepared muffin tin and bake for 20 to 25 minutes, or until a toothpick comes out clean.
  6. In the meantime prepare the icing: Melt the chocolate and the butter over very low heat stirring constantly. Remove from heat and add the cream or water, vanilla and the salt; stir. Gradually add the confectioners’ sugar; you may not use it all. Mix until smooth. Spread over warm cupcakes.
