Ingredients
1/3 cup reduced-fat mayonnaise
2 tablespoons Dijon mustard
1 tablespoon whole grain mustard
1 garlic glove, minced
1 tablespoon fresh lime juice
6 tablespoons sweet relish
2 (6 ounce) cans solid albacore tuna packed in water, drained
1/2 cup chopped celery
1/2 cup red onion
1/2 cup chopped fresh cilantro
12 slices whole grain bread, toasted
2 medium tomatoes, sliced
arugula leaves or spring mix
Directions
- Ina large bowl mix together mayo, both mustards, garlic, lime juice and sweet relish until well blended. Stir in tuna, celery, red onion and cilantro. Cover and refrigerate for at least 30 minutes.
- Spoon 1/2 cup of tuna on a piece of toasted bread. Top with tomato, arugula and a toasted bread slice. Cut sandwich in half.
