Ingredients
3 cloves garlic, minced
1/3 cup olive oil
¼ cup tomato sauce
2 tablespoons lime juice
2 tablespoons cilantro
½ teaspoon Ancho chili powder
½ teaspoon salt
2 pounds shrimp, peeled and deveined
Directions
1. In a large mixing bowl combine the garlic, oil, tomato sauce, lime juice and cilantro. Season with chili powder and salt. Mix thoroughly.
2. Add the shrimp and coat evenly. Cover and refrigerate for 20 minutes.
3. Preheat an outdoor grill to medium heat. Lightly oil the grate.
4. Remove the shrimp from the bowl and thread onto skewers. (If using wooden skewers, soak them in water for 15 minutes.)
5. Grill for 3 minutes on each side or until pink and opaque all the way through.
