Ingredients

1 whole boneless, skinless chicken breasts

2 tablespoons fresh lime juice

3 tablespoons extra virgin olive oil, divided

2 tablespoons soy sauce

4 cloves garlic, minced

¼ cup chopped fresh cilantro

2 teaspoons kosher salt

1 teaspoon crushed red pepper flakes

1 red pepper, seeded and sliced

1 green pepper, seeded and sliced

1 medium red onion, sliced

Salt and pepper

1 package of flour tortillas, taco sized

1 cup shredded Cheddar Jack cheese

Sour cream

Salsa

Guacamole

Directions

  1. Make the marinade by combining the lime juice, 2 tablespoons oil, soy sauce, garlic, cilantro, salt and red pepper flakes.
  2. Place the chicken in the marinade and let sit in the refrigerator for at least 2 hours or up to 8 hours. Grill chicken and slice into ¼ inch strips.
  3. While the chicken is cooking, in a large skillet add 1 tablespoon of olive oil and sauté the peppers and onions until soft. Salt and Pepper to taste. Set aside.
  4. To assemble, add the chicken, peppers and onions to a tortilla. Top with some of the cheese, sour cream, salsa and guacamole.
