Chicken Enchiladas

7 Boneless chicken breast
1 pkg. taco seasoning mix
3 cloves garlic
Salt & Pepper
1 pint sour cream
1 can cream of chicken soup
4 Tbsp of garlic
Salt & Pepper
1 lb Colby cheese, shredded small can green chilies 1 bunch chopped green onion ½ c sliced black olives 10 flour tortillas
Directions

To a large sauce pan add the chicken, taco seasoning, 3 cloves of garlic, salt and pepper. Boil all for 15 to 20 minutes until chicken is done. Let cool and shred. You can save water for soup.

Mix together one pint of sour crean, cream of chicken soup, 4 tablespoons garlic, salt and pepper. Set aside

Spoon sour cream mixture and spread on tortilla. Add chicken then Colby cheese, green chilies, green onion, and black olives. Spray pan with cooking spray, then add a little cream sauce before putting in filled tortillas. Top with more cream sauce, cheese, onion and olives. Bake 350 degrees for 1 hour.
