Caramel Apples

1 cup butter
2 cups packed dark brown sugar
1 cup dark corn syrup
1 (14 ounce) can sweetened condensed milk
¼ teaspoon kosher salt
1 teaspoons vanilla
8 Granny Smith apples, washed and dried well
8 wooden skewers
1 ½ cups chopped peanuts
Directions
- Line a baking sheet with aluminum foil and generously coat with non-stick cooking spray.
- Remove the stems from the apples and insert the wooden skewers in the stem side.
- In a medium saucepan, combine the butter, brown sugar, corn syrup, condensed milk and salt. Bring to a boil over medium-high heat.
- Cook and stir until dissolved. Cook until a candy thermometer reads 248 degrees, about 35 to 40 minutes. Remove from heat and stir in the vanilla.
- Hold an apple by the skewer and dip into the hot caramel, turning to coat completely.
- Remove form the caramel and roll in chopped nuts. Set on the prepared cookie sheet. Let cool completely.
