Caramel Apples

Ingredients

1 cup butter

2 cups packed dark brown sugar

1 cup dark corn syrup

1 (14 ounce) can sweetened condensed milk

¼ teaspoon kosher salt

1 teaspoons vanilla

8 Granny Smith apples, washed and dried well

8 wooden skewers

1 ½ cups chopped peanuts

Directions

  1. Line a baking sheet with aluminum foil and generously coat with non-stick cooking spray.
  2. Remove the stems from the apples and insert the wooden skewers in the stem side.
  3. In a medium saucepan, combine the butter, brown sugar, corn syrup, condensed milk and salt. Bring to a boil over medium-high heat.
  4. Cook and stir until dissolved. Cook until a candy thermometer reads 248 degrees, about 35 to 40 minutes. Remove from heat and stir in the vanilla.
  5. Hold an apple by the skewer and dip into the hot caramel, turning to coat completely.
  6. Remove form the caramel and roll in chopped nuts. Set on the prepared cookie sheet. Let cool completely.
