Candy Apples

8 apples, washed and dried well
8 wooden skewers
2 cups sugar
½ cup hot water
1 cup light corn syrup
¼ teaspoon cream of tartar
½ cup Red Hots
½ teaspoon red food coloring
Directions
- Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
- Remove the stems from the apples and insert the skewers in the stem ends.
- Combine the water, sugar, corn syrup, and cream of tartar in a medium saucepan. Heat over medium-high heat. Stir until the sugar dissolves. Stop stirring and cook until mixture reaches 250 degrees on a candy thermometer.
- Add the cinnamon candies and the red food coloring. Stir to incorporate and melt the candy. Continue to cook without stirring until mixture reaches 300 degrees.
- Remove from heat and stir so it is smooth and even. Hold the apple by the skewer and dip into the candy, tilting the pan and rotating the apple to cover completely. Remove the apple from the candy and twirl to remove excess. Place on prepared cookie sheet and repeat with remaining apples. Allow to cool to room temperature.
