Black Bean Chipotle Salsa

Ingredients

3 (15 ounce) cans black beans, drained and rinsed

1 (11 ounce) can whole kernel corn, drained

1 (15 ounce) can diced tomatoes, drained

½ cup chopped roasted red peppers (jarred)

1 cup chopped green onion

1 (7 ounce) can chipotle peppers in adobo sauce

1 bunch cilantro leaves, chopped

1 tablespoon lime juice

Salt and pepper

Directions

  1. In a large bowl mix together the beans, corn, tomatoes, roasted red peppers, green onion.
  2. Chop one pepper from the jar of chipotle peppers in adobo sauce. Add to the bean mixture. Add one tablespoon of the sauce from the jar to the bean mixture. You can freeze the rest of the can.
  3. Mix in the cilantro and the lime juice. Add the salt and pepper to taste.
