Ingredients

3 (15 ounce) cans dark red kidney beans, drained and rinsed

1 red bell pepper, seeded and chopped

1 small red onion, chopped

1 medium tomato, seeded and chopped

2 green onions, white and tender green parts, chopped

½ cup olive oil

½ cup red wine vinegar

2 tablespoons lime juice

1 tablespoon lemon juice

2 tablespoon sugar

1 tablespoon kosher salt

1 garlic clove, minced

¼ cup chopped fresh cilantro

½ tablespoon ground cumin

½ tablespoon ground black pepper

½ teaspoon chili powder

Directions

  1. In a large bowl, combine the beans, red pepper, onion, tomato and green onion.
  2. In a small bowl, mix together the oil, vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, pepper and chili powder.
  3. Pour the dressing over the vegetables and mix. Chill for at least an hour.
