Ingredients
3 (15 ounce) cans dark red kidney beans, drained and rinsed
1 red bell pepper, seeded and chopped
1 small red onion, chopped
1 medium tomato, seeded and chopped
2 green onions, white and tender green parts, chopped
½ cup olive oil
½ cup red wine vinegar
2 tablespoons lime juice
1 tablespoon lemon juice
2 tablespoon sugar
1 tablespoon kosher salt
1 garlic clove, minced
¼ cup chopped fresh cilantro
½ tablespoon ground cumin
½ tablespoon ground black pepper
½ teaspoon chili powder
Directions
- In a large bowl, combine the beans, red pepper, onion, tomato and green onion.
- In a small bowl, mix together the oil, vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, pepper and chili powder.
- Pour the dressing over the vegetables and mix. Chill for at least an hour.
