BBQ Chicken Sandwiches

4 chicken breast halves, boneless, skinless
salt and pepper
1 small onion, finely chopped
4 garlic cloves, minced
1 1/3 cup of your favorite BBQ sauce
1/2 cup cider vinegar
Hot pepper sauce
6 kaiser rolls
1 1/2 cups Monterey Jack cheese, shredded
Directions
- Season the chicken with salt and pepper. Place in a stock pot with the onion, garlic and just enough water to cover the chicken,
- Add the BBQ sauce, vinegar and a few drops of the hot pepper sauce, then bring to a boil.
- Reduce the heat to a simmer and cook the chicken until it is cooked through, about 25 minutes. Remove the chicken from the sauce and chop into very small pieces.
- Return the sauce to a boil and cook for 15 minutes or until sauce is reduced by half, skimming off any fat occasionally. Add the chicken back into the sauce and heat through.
- Spoon the mixture onto the rolls and top with the cheese. Serve
