Ingredients
2 boneless, skinless chicken breast halves
salt and pepper
1/2 medium white onion, chopped
2 cloves garlic, minced
3/4 cup your favorite BBQ sauce
1/4 cup cider vinegar
Hot pepper sauce
1 bag blue corn tortilla chips
2 cups Monterey jack cheese, shredded
1 medium tomato, chopped
2 green onions, chopped
1/4 cup sliced pickled jalapeno peppers
handful of fresh cilantro, chopped
sour cream, for garnish
Directions
- Season the chicken with salt and pepper, place in a large saucepan with onion, garlic, and just enough water to cover the chicken breast (about 3/4 cups). Add the BBQ sauce, vinegar and a few drops of hot sauce to a boil. Reduce heat and simmer until the chicken is cooked through, about 15 minutes. Remove chicken from the sauce and shred with 2 forks.
- Boil the sauce, skimming occasionally, until reduced by half, about 15 minutes. Add the chicken and heat through.
- Spread the tortilla chips onto a cookie sheet and top with the chicken mixture. Sprinkle with cheese and bake in a preheated 350 degree oven for 10 minutes,until cheese is melted. Top with tomato, green onion, jalapenos, and cilantro. Garnish with sour cream.
