Ingredients

1/3 cup firmly packed brown sugar

2 tablespoons all-purpose flour

1/8 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1 tablespoon cold butter

2 ½ cups all-purpose flour

3 teaspoons baking powder

½ teaspoon salt

¼ teaspoon baking soda

½ cup (1 stick) butter or margarine

1 cup sugar

3 eggs

3 medium-sized ripe bananas, peeled and mashed (1 cup)

¼ cup wheat germ

½ cup finely chopped walnuts

Directions

  1. Preheat oven to 325 degrees.
  2. In a small bowl, mix together brown sugar, 2 tablespoons flour, cinnamon and nutmeg. With a fork cut in the 1 tablespoon cold butter until it resembles coarse cornmeal. Set aside.
  3. With a whisk, mix together 2 ½ cups flour, baking powder, salt and baking soda in a medium bowl and set aside.
  4. Line a 9x5 inch loaf pan with foil and spray with non stick cooking spray. Set aside.
  5. In a large bowl, beat together the butter, sugar and eggs until light and fluffy. Stir in the bananas. Stir in the flour mixture, and then fold in the wheat germ and walnuts. Pour into prepared loaf pan and sprinkle with the streusel mixture.
  6. Bake in a preheated oven for 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack for 10 minutes.
  7. Loosen the foil edges and pull bread out. Cool bread completely without foil on wire rack.
