Comments: This is a delicious recipe. The sauce can be made ahead of time and frozen for up to 2 months.Ingredients
1 pound sweet or spicy Italian sausage, castings removed and crumbled
½ a small onion, diced
1 tablespoon minced garlic
2 (28 ounce) cans tomato puree
1 teaspoon dried thyme
2 teaspoons dried basil
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
¼ teaspoon crushed red pepper flakes
1/8 cup of sugar
1 pound dried whole wheat penne pasta
1 pound fresh mozzarella, cut into ½ inch cubes
¾ cup shredded mozzarella
¾ cup grated parmesan
Directions
- Heat the oven to 400 degrees F.
- In a large saucepan, cook the sausage until just browned, about 7 minutes. Add the onion and garlic and stir until lightly browned, about 3 minutes. Add the tomatoes and the herbs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.
- In the meantime, bring a large salted pot of water to a boil and cook the pasta according to the package instructions. Drain and add to a 9x13 inch baking dish.
- Add the fresh mozzarella and toss. Mix in some of the sauce. You should have a cup to a cup and a half left over. Sprinkle the top with the shredded mozzarella and parmesan cheese. Bake in a preheated oven until the cheese is slightly browned, about 20 minutes. Serve Immediately.
