Ingredients

1 pound lean ground beef

salt and pepper to taste

1 (15 ounce) can dark red kidney beans

1 (15 ounce) can pinto beans or black beans

1 (15 ounce) can cannellini beans or navy beans

3 cans Mexican-style stewed tomatoes

2 celery stalks, chopped

1 red bell pepper, chopped

1/4 cup red wine vinegar

2 tablespoons chili powder

1 teaspoon ground cumin

1 tablespoon dried parsley

1 teaspoon dried basil

1/2 teaspoon dried oregano

1 teaspoon Worcestershire sauce

1/2 cup red wine (optional)

Directions

  1. In a large skillet over medium-high heat, cook ground beef until browned. Drain off grease and season with salt and pepper.
  2. In a slow cooker, combine beef, beans, tomatoes, celery, red bell pepper, and vinegar. Season with spices and Worcestershire sauce. Stir to distribute the ingredients evenly.
  3. Cook on high for 6 hours and low for 8 hours. Add the wine during the last 2 hours of cooking time.
